You should preferable stay in Brighton if your itinerary does not include too much travel outside. 
Paddington is the hub for hotels. The grand Victorian buildings here are alternated with stay options of all kinds suiting budgets of all sizes. The area is well connected with the tube and the railway station is nearby. There is no end to the number of eating places and pubs. It’s a cheaper alternative to the luxury city hotels.
